

Having grown up in Illinois, Mr Kennedy has a great appreciation for deep dish Chicago Pizza. He was one of those who used to wait an hour in line on the weekend to get into his favorite restaurant and another 45 minutes at the table for his pepperoni and sausage pizza.
Mr Kennedy was known for his pizza's long before opening his own restaurant in San Antonio in April 2009. After moving away from Chicago, he started experimenting in his kitchen. Friends and family were happy to come and taste test the pizza as he made changes here and there. After being asked to cater events out of his kitchen, he decided to open his own place.
When asked what makes Chicago Pizza different he says, "It is totally different than other pizzas. The crust is deep and has its own distinctive flavor, as does the chunky, tomato sauce. The pizza is also constructed differently than anywhere else. Ground meats, such as bacon, sausage and ground beef, are place on the bottom next to the crust. Cheese, sauce and then vegtables and sliced meats are on top. The Deep Dish Chicago Pizza is often referred to as a Pizza Pie as it is a thick and hearty pizza. For example, the average person consumes generally 1 1/2 to 2 slices.
